Asparagus Salad

Light and bright, this ASPARAGUS SALAD is a delicious addition to any meal this spring and summer! It can be ready in 20 minutes, so take it to the next barbecue, make it as an easy side for a pool party, or serve it with your favorite protein at a dinner party.



INGREDIENTS

1 bunch asparagus, trimmed

1 cup grape tomatoes, halved

1/2 cup radish, thinly sliced

1/2 cup frozen peas, thawed

1/3 cup red onion, thinly sliced

1/3 cup crumbled feta

Lemon, sliced or quartered for garnish

Fresh parsley, for garnish


DRESSING INGREDIENTS

1/4 cup extra virgin olive oil

2 Tbsp lemon juice

2 Tbsp balsamic vinegar

1/4 tsp salt

1/4 tsp fresh black pepper


HOW TO MAKE

-Bring a large pot of salted water to a boil, and set a bowl of ice water nearby.

-Put the asparagus into the boiling water, and blanch for 2-3 mins, until tender and bright green.

-Transfer asparagus to the ice water for 1 min, then remove and cut into thirds.

-In a large bowl combine asparagus, tomatoes, radish, peas, onion, and feta cheese.

-In a small bowl whisk together olive oil, lemon juice, balsamic vinegar, salt, and pepper. -Pour the dressing into the large bowl, and mix thoroughly to coat evenly.

-Transfer to a serving dish, and garnish with lemons and fresh parsley.
