What I love about this gluten-free SLOW COOKER SHREDDED HONEY GARLIC CHICKEN is how versatile it is. You can eat it in a rice bowl, on a sandwich, on a salad, in a lettuce cup, or alone with veggies on the side.
Oh, and the slow cooker does all the work…I love that about this recipe, too.
INGREDIENTS
1/3 cup coconut aminos
1/4 cup honey
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
1/4 tsp black pepper
2 Tbsp fresh garlic, minced
2 lbs chicken breast, cut into bite-sized pieces
Green onions, chopped, for topping
HOW TO MAKE
-In a medium bowl, combine coconut aminos, honey, tomato paste, apple cider vinegar, black pepper and garlic.
-Whisk until well combined.
-Place the chicken in the slow cooker.
-Pour the sauce over the chicken.
-Cover and cook on high for 1.5 hours (depending on slow cooker), or until chicken is cooked through to 165° F.
-Once cooked through, shred, and stir to absorb sauce.
-Top with green onions and enjoy!
