INGREDIENTS

1 Tbsp extra virgin olive oil

1 lb lean ground beef

1½ cups yellow onion, diced

1 Tbsp fresh garlic, minced

2 Tbsp tomato paste

1 Tbsp coconut aminos

1 tsp yellow mustard

1 tsp kosher salt

½ tsp black pepper

½ tsp smoked paprika

1 (9 oz) box gluten-free orzo

2¾ cups beef broth

1 cup whole milk or unsweetened plain almond milk

2½ cups sharp cheddar cheese, shredded, divided

¼ cup dill pickles, finely chopped

1 Tbsp pickle juice

2 Tbsp fresh chives, chopped


Optional for serving

Diced tomatoes

Extra chopped dill pickles

Shredded iceberg lettuce


HOW TO MAKE

Heat the oil in a large, deep skillet over medium-high heat. 


Add the ground beef and diced onion. Cook for 6-8 minutes, breaking up the beef with a wooden spoon, until the meat is browned and the onion is tender. Drain excess grease if needed.


Stir in the garlic, tomato paste, coconut aminos, mustard, salt, pepper, and smoked paprika. 


Cook for 1 minute, stirring often, until the tomato paste deepens in color and the garlic is fragrant.


Pour in the beef broth and milk, stirring to combine. 


Bring to a gentle boil, then stir in the orzo. 


Reduce the heat to medium-low and simmer for 10-12 minutes, stirring every 2-3 minutes, until the orzo is tender and most of the liquid has been absorbed.


Remove the skillet from the heat. Stir in 2 cups of the cheddar cheese a handful at a time until completely melted and smooth.


Fold in the chopped pickles and pickle juice.
