Simple Marinara

There really isn’t anything quite like a fresh, homemade SIMPLE MARINARA. This recipe is easy and straightforward, but the outcome is bright and flavorful. I've always been intimidated by making my own marinara, but this recipe is approachable. It takes about 30 minutes to make, and if you close your eyes, you almost feel like you're in an authentic Italian kitchen. Key word, almost.



INGREDIENTS

2 Tbsp extra virgin olive oil

1/2 cup yellow onion, diced

1 Tbsp fresh garlic, minced

1 (28oz) can whole peeled tomatoes

2 Tbsp tomato paste

1 tsp dried oregano

1/4 cup fresh basil, chopped

Salt, to taste

Black pepper, to taste


HOW TO MAKE

-In a medium sauce pan, heat olive oil over medium heat.

-Add in onion, and sauté until softened, about 5-7 mins.

-Add in garlic, and stir for 1 min, making sure it doesn’t burn.

-Add in tomatoes, crushing them with a spoon to break them down.

-Stir in tomato paste and oregano.

-Simmer uncovered on low heat for 15-20 mins.

-If you prefer a smoother marinara, use an immersion blender or stand blender to reach desired consistency. Add back to pan if using stand blender.

-Add salt and pepper to taste.

-Stir in fresh basil and serve.
