INGREDIENTS
2 Tbsp extra virgin olive oil
2 Tbsp unsalted butter
16 oz cherry tomatoes, halved
1 1/2 Tbsp fresh garlic, minced
1/4 cup chicken or vegetable broth
1 (8oz) pkg Palmini angel hair pasta, drained and rinsed
1/2 cup fresh basil, chopped, divided
1/3 cup fresh parmesan cheese, grated, more for garnish
2 tsp fresh lemon juice
1 tsp lemon zest
1/4 tsp salt, more to taste
1/2 tsp black pepper, more to taste
Crushed red pepper flakes
HOW TO MAKE
Heat the olive oil and butter in a large skillet over medium heat until the butter has melted.
Add the tomatoes and cook for 7-9 minutes, stirring occasionally, until they begin to blister, soften, and release their juices.
Stir in the garlic and cook for 30 seconds, just until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes to allow the flavors to come together.
While the tomatoes simmer, drain and rinse the Palmini Angel Hair well according to the package directions.
Add the Palmini to the skillet and toss to coat in the tomato mixture. Cook for 2–3 minutes, stirring occasionally, until heated through.
Remove the skillet from the heat. Stir in the Parmesan cheese, ⅓ cup of the basil, lemon juice, lemon zest, salt, and black pepper.
Taste and adjust the seasoning with additional salt, pepper, or crushed red pepper flakes, if desired.
Garnish with the remaining fresh basil, additional Parmesan, and a pinch of crushed red pepper flakes. Serve immediately.
