It's a simple meal made with lean ground beef, colorful vegetables, and Palmini rice, all tossed in a savory sesame and coconut aminos sauce. One of my favorite things about this recipe is how easy it is to customize. Swap in your favorite vegetables, adjust the spice level with more or less crushed red pepper, or top it with extra green onions and sesame seeds for even more flavor and crunch. The Palmini rice keeps the dish light while soaking up the savory sauce, making it a great option when you're looking for a lower-carb alternative to traditional rice.

INGREDIENTS
1 lb ground beef
1 tsp toasted sesame oil
1/3 cup coconut aminos
1 Tbsp extra virgin olive oil
2 cups zucchini, chopped
2 cups fresh green beans, chopped
2 cup red bell pepper, chopped
1 Tbsp fresh garlic, minced
2 (12 oz) pkgs Palmini rice
1 Tbsp ground ginger
1 tsp garlic powder
1/4 tsp crushed red pepper
1/4 tsp black pepper
1 tsp rice vinegar
Salt, to taste
White sesame seeds, for garnish
Green onion, chopped, for garnish
Fresh cilantro, chopped, for garnish
HOW TO MAKE
-Over medium heat in a deep skillet, cook ground beef until cook through. Break it up as it cooks.
-While beef is cooking, whisk together coconut aminos and toasted sesame oil.
-Once beef is cooked through, drain excess grease, and set aside.
-In the same skillet, add olive oil, zucchini, green beans, and bell pepper. Sauté for 5 minutes.
-Add garlic, stir to combine, and sauté for 1 more minute.
-Pour Palmini into colander and rinse thoroughly. The add to skillet with vegetables, and stir to combine.
-Add cooked ground beef back into skillet, and stir to combine.
-Stir in ginger, garlic powder, and crushed red pepper.
-Stir in coconut amino sauce mixture and rice vinegar. Taste for salt adjustments.
-Let simmer until heated through, just a few minutes.
-Garnish with sesame seeds, green onions, and fresh cilantro.
-Serve immediately and enjoy!
