Buffalo Chicken Salad

This BUFFALO CHICKEN SALAD is great for weekday lunches, beach/lake days, and summer picnics! Cook the chicken any way you like, or use a rotisserie chicken for a speedier salad.


SIDE NOTE: For a less spicy chicken salad, start with a few tablespoons of buffalo sauce. You can always add more!



INGREDIENTS

2 cups cooked chicken, shredded

1/2 cup celery, diced

1 cup yogurt (I use dairy-free)

1/4 cup green onion, chopped

1 Tbsp fresh parsley, chopped

1/4 tsp garlic powder

1/4 cup buffalo sauce (more or less to taste)

Salt, to taste

Black pepper, to taste


HOW TO MAKE

-Combine all ingredients in a large bowl and mix until combined.

-Serve and enjoy!
