This Buffalo Chicken Salad is a tasty spin on a classic! It's great for weekday lunches, beach/lake days, and summer picnics. Can confirm, it's also great just sitting on your couch in the air conditioning!
One of the best things about this Buffalo Chicken Salad is how easy it is to customize. Add extra veggies like cucumbers, shredded carrots, or bell peppers, or sprinkle on blue cheese crumbles for a classic buffalo flavor. This healthy Buffalo Chicken Salad delivers all the spicy, tangy flavors of buffalo wings in a lighter, healthier meal. It's naturally high in protein, easy to make low carb, and perfect for anyone craving a fresh salad that doesn't skimp on flavor.
Cook the chicken any way you like, or use a rotisserie chicken for a speedier salad. One of the biggest debates surrounding chicken salad is if the chicken should be in chunks or shredded. Personally, I prefer shredded, but if you're a chunky chicken salad fan, then just cut the chicken into bite-size pieces. I also prefer to use dairy-free yogurt, but feel free to use regular yogurt if you prefer; the measurements stay the same either way.
SIDE NOTE: For a less spicy chicken salad, start with a few tablespoons of buffalo sauce. You can always add more!

INGREDIENTS
2 cups cooked chicken, shredded
3/4 cup yogurt (I use dairy-free)
1/2 cup celery, diced
1/4 cup green onion, chopped
2 Tbsp fresh parsley, chopped
1 Tbsp fresh dill
1/4 tsp garlic powder
1/4 cup buffalo sauce (more or less to taste)
Salt, to taste
Black pepper, to taste
HOW TO MAKE
-Combine all ingredients in a large bowl and mix until combined.
