Lazy Lasagna

This LAZY LASAGNA might be one of the easiest kid-friendly recipes there is…you don’t have to chop any veggies, and you don’t even have to thaw the frozen ravioli!


But let’s talk cheese real quick. I eat dairy-free most of the time, but I’m not impressed with the dairy-free cheese on the market. So with that, when I eat cheese, I always shred it myself off the block rather than buy the pre-shredded. Why? Well, cheese off the block melts better since there aren’t preservatives and additives, it tastes fresher/better because there aren’t preservatives and anti-caking agents, and it’s believed to be less expensive since you’re not paying for convenience.


PRO TIP: Put the mozzarella in the freezer for a few mins to make shredding a little easier!


INGREDIENTS

1/2 lb ground beef

1/2 lb Italian sausage

1 Tbsp Italian seasoning

1 (25 oz) jar marinara sauce (I use @organicobello)

1 cup mozzarella, freshly shredded

1/2 cup Parmesan, freshly shredded, more for topping

2 (9.9 oz) boxes frozen gluten-free cheese ravioli (I use @cappellos)


HOW TO MAKE

-Preheat oven to 400.

-Spread 1/2 cup of marinara on bottom of 9x13 baking dish.

-Brown ground beef and Italian sausage in a skillet.

-Add in Italian seasoning and stir.

-Pour rest of marinara into skillet and stir.

-Add one package of frozen ravioli to baking dish in 4 rows of 2.

-Spread half of the meat mixture on top of ravioli.

-Sprinkle half of the cheese mixture on top.

-Add another layer of ravioli.

-Spread the rest of the meat mixture on top.

-Sprinkle remaining cheese mixture on top.

-Cover with foil, and bake for 30 mins.

-Remove foil, and bake uncovered for 15 more mins.

-Remove dish from oven, and let cool for 5 mins before serving.
