Roasted asparagus is a quick and easy side dish that adds a brightness to any meal. This recipe uses lemon, garlic, and Parmesan to enhance the freshness of the asparagus, and wow, I just love these flavors together! 😋 Save this recipe to have a simple side dish idea always on hand!
INGREDIENTS
1 bunch asparagus, rinsed
3 Tbsp extra virgin olive oil
1 Tbsp fresh garlic, minced
1/2 lemon, juiced
1/2 lemon, sliced
1/4 tsp sea salt, more to taste
1/4 cup fresh Parmesan, shaved
HOW TO MAKE:
-Preheat oven to 375.
-Line a large baking sheet with unbleached parchment paper.
-Snap the bottom part off of each asparagus stalk (you can also cut it off with a knife.)
-Place asparagus on baking sheet, and drizzle with olive oil.
-Sprinkle garlic, lemon juice and salt on asparagus, and toss to coat.
-Lay lemon slices on top, and bake, uncovered, for 13-15 mins. Asparagus should be bright green and slightly tender when done.
-Remove from oven, and discard lemon slices. If hosting, I like to keep the lemon slices to decorate the serving platter.
-Sprinkle asparagus with Parmesan.
-Serve immediately.
