Roasted Sweet Potatoes

It's simple, it's sweet, it's basically holiday side dish royalty! These ROASTED SWEET POTATOES are a good alternative if sweet potato casserole just isn't cutting it this year. The herbs and butter give it a rich, fresh flavor that pairs well with both turkey and ham.
A little secret about me, I am a newer fan of sweet potatoes. While they still aren't a top favorite, I'm not skipping anymore like I used to. Recipe tip- you can throw in some pomegranate seeds to add some crunch to the fluffy, pillowy texture of this dish.

INGREDIENTS
2 lbs sweet potatoes, peeled and cut into 1/2 inch cubes (about 4 large sweet potatoes)
1/4 cup unsalted butter, melted
1 Tbsp dried oregano
1 Tbsp dried thyme
1/2 Tbsp dried rosemary
1 tsp salt, more to taste
1/2 tsp black pepper
2 Tbsp fresh parsley, finely chopped, for garnish
HOW TO MAKE
-Preheat oven to 425, and line a large baking sheet with parchment paper.
-Place the potatoes in a large bowl, and add the butter, dried oregano, dried thyme, dried rosemary, salt, and pepper. Stir to coat potatoes.
-Spread the potatoes in a single layer on the prepared baking sheet.
-Place baking sheet in oven and roast for 35-40 minutes, until fork tender. Stir them halfway through.
-Sprinkle fresh parsley on top, and serve warm.
