Salted Caramel Apple Hand Pies

Ready to embrace all the crisp fall vibes? These gluten-free, refined sugar-free SALTED CARAMEL APPLE HAND PIES are pure autumn perfection!
It's still pretty hot here in Dallas, which isn't really a surprise for us. It doesn't tend to get cooler until later in the fall. We have a pool in our new house though, so we are definitely enjoying the extra pool days!
Something I love about these hand pies is that, obviously, they make a delicious dessert. But, they also make a great breaksfast! Just pair them with your morning coffee, or a cup of hot tea, and you've got yourself a great start to the day. You can trust me on this, I have first-hand experience!
I must admit, I am not known to be a big make it from scratch baker. I love box mixes (Simple Mills makes great gluten-free options), and I'm good with that. However, it is fun to get covered in flour in the kitchen every once in a while! Yes, speaking from first-hand experience here, too!
I hope you enjoy these Salted Caramel Apple Hand Pies as much as we do. There's just something cool about walking around with a pie in your hand, ya know?! This recipe makes 8 hand pies, so share them, or don't...I'm not judging.
NOTE: Double the salted caramel sauce for drizzling on top of hand pies. Optional, but a delicious idea.

DOUGH INGREDIENTS
Dry Mix:
1 1/2 cups blanched, finely ground almond flour
1/2 cup arrowroot flour/starch
1/4 cup ground flaxseeds
1/4 cup tapioca flour/starch
1 tsp sea salt
1 tsp baking soda
Wet Mix:
2 large eggs, room temperature
2 Tbsp apple cider vinegar
2 Tbsp coconut oil, melted
SALTED CARAMEL SAUCE INGREDIENTS
1/4 cup full-fat canned coconut milk, shaken
2 Tbsp coconut sugar
1 tsp coconut oil
1/2 tsp sea salt
1/4 tsp vanilla extract
APPLE FILLING INGREDIENTS
3 cups Honeycrisp or Granny Smith apples, peeled, cored, and finely diced (about 2 apples)
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp lemon juice
1 tsp arrowroot flour/starch
For Assembly:
1 egg, beaten (for egg wash)
1 Tbsp coconut sugar, more to taste (for sprinkling on top of pies)
HOW TO MAKE
Dough:
-In a large bowl, whisk together the almond flour, arrowroot starch, flax meal, tapioca starch, sea salt, and baking soda until well combined and lump-free.
-In a separate bowl, whisk 2 eggs, apple cider vinegar, and coconut oil until smooth.
-Add the wet mix to the dry mix, and stir until a soft, slightly sticky dough forms. If it’s too dry and crumbly, add cold water 1 tsp at a time until it holds together.
-Form the dough into a ball, and chill in the refrigerator for 10-15 minutes to make it easier to roll out.
Salted Caramel Sauce:
-In a small saucepan over medium heat, combine the coconut milk, coconut sugar, and coconut oil. Stir until the sugar dissolves.
-Bring to a gentle simmer, and cook for 5-7 minutes. Stir occasionally, until thickened and caramel-colored. Remove from heat.
-Stir in the sea salt and vanilla extract. Let cool slightly (it will thicken as it cools).
Apple Filling:
-In a medium saucepan, combine the diced apples, the prepared salted caramel sauce, cinnamon, nutmeg, and lemon juice.
-Cook over medium heat for 5-7 minutes, stirring occasionally, until the apples soften slightly.
-Sprinkle the arrowroot flour over the apple mixture, and stir for 1 minute until thickened.
-Remove from heat and let the filling cool completely.
Assemble Hand Pies:
-Preheat your oven to 350, and line a large baking sheet with parchment paper.
-Divide the chilled dough into 8 equal portions.
-On a clean surface lightly dusted with arrowroot flour, roll each portion into a 5-inch circle (about 1/8-inch thick). Don’t get hung up on it being a perfect circle.
-Place 2-3 Tbsp of the cooled apple filling in the center of each circle.
-Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork.
-Cut 2-3 small slits on the top of each pie for steam to escape.
-Transfer the pies to the prepared baking sheet. Brush the tops with the egg wash and sprinkle with coconut sugar.
Bake Hand Pies
-Bake for 20-25 minutes, or until the crust is golden brown and crisp at the edges.
-Let the pies cool for 5 minutes.
-If you made extra salted caramel sauce per the Note above, warm it on the stove, and drizzle over the warm pies. Sprinkle a pinch of flaky sea salt on top.
