Taco Soup

If Taco Tuesday and Soup Season had a baby, this would be it! This ONE POT 30-MINUTE taco soup is hearty and full of flavor thanks to a delicious mix of spices and Kettle & Fire beef broth. INGREDIENTS

2 Tbsp extra virgin olive oil

1 lb ground beef

1 cup green bell pepper, chopped

1 cup yellow onion, chopped

1/4 cup fresh jalapeño, seeded and finely chopped (optional)

2 cloves garlic, minced

1 (10oz) can diced tomatoes

1 (8oz) can tomato sauce

1 (4oz) can diced green chiles

4 cups beef broth (I use Kettle & Fire)

1/4 cup fresh cilantro, chopped (more to top)

2 Tbsp fresh lime juice

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

1/2 tsp dried oregano

1 tsp salt, more to taste

1/2 tsp black pepper, more to taste

1 (15oz) can black beans, rinsed and drained

1 (15oz) can whole kernel corn, drained

Optional Toppings: fresh jalapeños, yogurt, lime slices, fresh shredded cheese, crushed tortilla chips, fresh cilantro, avocado slices


HOW TO MAKE

-Heat a large pot with extra virgin olive oil over medium-high heat.

-Brown ground beef with onions and bell pepper, stirring until beef is crumbled and browned.

-Once browned, add in jalapeño and garlic, and sauté for 1 min.

-Stir in diced tomatoes, tomato sauce, green chiles, beef broth, spices, lime juice, and cilantro.

-Bring to a boil then lower to simmer.

-Cover and simmer for 20 mins, stirring occasionally.

-Stir in black beans and corn.

-Cook for a few mins until heated through.

-Ladle into bowls, and add desired toppings.
