Buffalo Chicken Meatballs

These Buffalo Chicken Meatballs are everything you love about classic buffalo wings in a healthier, easy-to-make package. Made with lean ground chicken, bold buffalo sauce, garlic, and simple seasonings, they're juicy, flavorful, and packed with protein. Each bite delivers the perfect balance of spicy, tangy buffalo flavor with a tender texture that's hard to resist.
Whether you're serving them as a game day appetizer, meal-prepping lunches for the week, or looking for an easy weeknight dinner, these meatballs are always a hit. Tossed in extra buffalo sauce and finished with ranch or blue cheese dressing, they're simple to make, naturally gluten-free, and guaranteed to satisfy any buffalo chicken craving.

INGREDIENTS
1 lb ground chicken
1 egg
1/2 cup gluten-free breadcrumbs
3 Tbsp buffalo sauce plus 1/2 cup for tossing (I use Primal Kitchen Foods)
2 Tbsp green onion, finely diced
1/2 Tbsp fresh garlic, minced
1/2 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
Optional Topping: Ranch, blue cheese crumbles, green onion
HOW TO MAKE
-Preheat oven to 425.
-Line a large baking sheet with unbleached parchment paper.
-In a large bowl, add the ground chicken, egg, breadcrumbs, buffalo sauce, green onion, garlic, onion powder, smoked paprika, salt, and pepper.
-Mix until well combined.
-Roll about 1 Tbsp of chicken mixture into a ball, and place on baking sheet.
-Repeat the above step until all mixture is formed into meatballs.
-Bake for 15-17 mins, or until meat thermometer reads 165 degrees.
-After meatballs are fully cooked, place into a large bowl.
-Pour 1/2 cup buffalo sauce over meatballs and gently toss.
-Place meatballs on serving platter.
-Garnish with toppings of choice, and serve with ranch or blue cheese dressing.
