Another buffalo sauce recipe, but this time in the form of chicken meatballs! Meatballs are always a popular pot-luck or party dish, and this recipe puts a fun little twist on them. Serve these up, sit back, and watch them disappear!
SIDE NOTE: Add a small piece of blue cheese or mozzarella to the middle of the meatball before putting them in the oven. It’ll be a cheesy surprise!
SIDE NOTE 2: After these cook, you can keep them warm in a crockpot instead of putting on a serving dish.
INGREDIENTS
1 lb ground chicken
1 egg
1/2 cup gluten-free breadcrumbs
3 Tbsp buffalo sauce plus 1/2 cup for tossing (I use Primal Kitchen Foods)
1 Tbsp green onion, finely diced
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp black pepper
Optional Topping: Ranch, blue cheese crumbles, green onion
HOW TO MAKE
-Preheat oven to 425.
-Line a large baking sheet with unbleached parchment paper.
-In a large bowl, add the ground chicken, egg, breadcrumbs, buffalo sauce, green onion, garlic, salt and pepper.
-Mix until well combined.
-Roll about 1 Tbsp of chicken mixture into a ball, and place on baking sheet.
-Repeat the above step until all mixture is formed into meatballs.
-Bake for 15-17 mins, or until meat thermometer reads 165 degrees.
-After meatballs are fully cooked, place into a large bowl.
-Pour 1/2 cup buffalo sauce over meatballs and gently toss.
-Place meatballs on serving platter.
-Garnish with toppings of choice, and serve with ranch or blue cheese dressing.
