Buffalo Chicken Taquitos

Calling all buffalo sauce lovers! These creamy air fryer buffalo chicken taquitos are pretty much perfect for any occasion. Whether it's a shower, a Super Bowl party, a potluck, or holiday, add these to your list!


SIDE NOTE 1: Cook times may vary depending on type of air fryer you have. I have a Cosori.


SIDE NOTE 2: This recipe makes 8 taquitos.



INGREDIENTS

2 1/2 cups chicken, cooked and shredded

1/2 cup Buffalo sauce (I use Primal Kitchen Foods)

4 oz dairy-free cream cheese (I use Kite Hill)

1 (8-count) pkg tortillas (I use Siete cassava)

Avocado oil cooking spray (I use Chosen Foods)

Optional Toppings & Dips: green onions, sour cream, Greek yogurt, Ranch, blue cheese crumbles


HOW TO MAKE

-Preheat air fryer to 380.

-In a large mixing bowl, add cream cheese and buffalo sauce. Stir to mix.

-Stir in shredded chicken. Stir until well combined.

-In a small skillet over medium heat, heat tortillas for a few seconds on each side until pliable (makes them easier to roll). Be careful, turning and removing the tortilla will be HOT!

-Place warmed tortilla on a flat surface, and add 2-3 Tbsp of chicken mixture in a line to the first third of the tortilla (closest to you).

-Carefully roll the tortilla up (away from you), and set aside seam side down. Repeat last 3 steps until all tortillas are filled and rolled.

-Line air fryer basket with unbleached parchment paper.

-Place taquitos in a single layer in air fryer, making sure they aren’t too crowded.

-Lightly spray each taquito with avocado oil cooking spray.

-Cook for 5 mins then turn over.

-Lightly spray again with avocado oil cooking spray.

-Cook for 5 mins on this side.

-Remove and let cool for 5 mins before serving with dips of choice.
