Homemade Gluten-Free Flatbread

Fresh from the skillet! This HOMEMADE GLUTEN-FREE FLATBREAD is so simple to make, and dangerously addictive. I'm not a huge baker by any stretch, so when I say this was simple to make, I mean it. One bite of this warm, fluffy flatbread, and you’ll swear off the store-bought stuff forever. Mark my words!
NOTE: This recipe makes 4 gluten-free flatbreads.

INGREDIENTS
1 cup gluten-free all-purpose flour (I use Bob's Red Mill 1:1)
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp garlic powder
1/2 cup water
2 Tbsp extra virgin olive oil, more for cooking
1 Tbsp plain yogurt (I use dairy-free Kite Hill)
HOW TO MAKE
-In a large bowl, combine gluten-free flour, baking powder, salt, and garlic powder.
-Add in water, olive oil, and yogurt, and stir until a soft dough forms.
-On a lightly floured surface, gently knead the dough for 1 minute.
-Divide into 4 equal portions, and roll each into a ball.
-Using a rolling pin, roll each ball into a thin, roundish flatbread (about 6-8 inches wide).
Dust with flour to prevent sticking, if necessary.
-Heat a skillet over medium heat and lightly brush with olive oil. Cook each flatbread for 2-4 minutes per side until golden and slightly puffed. You may need to brush skillet with olive oil in between cooking flatbreads.
-Enjoy!
