Here in Texas, queso is a way of life. When I moved to LA, most places didn’t even know what queso was…I immediately questioned my decision to move there. Anyway, standard queso is so dang good, but so dang bad for you. This recipe is a fix for that…CLEAN QUESO! A dairy-free loaded piece of Heaven.



INGREDIENTS

2 jars dairy-free queso (I use @sietefoods nacho)

1/2 lb grass-fed ground beef

1/2 lb ground pork sausage

1/4 cup water

2 Tbsp + 1/2 tsp taco seasoning, divided (I use mild @sietefoods)

1 fresh jalapeño, chopped (seeded for less spicy option)

1/2 white onion, chopped

2 Tbsp cilantro, chopped

1/4 cup dairy-free Greek yogurt (I use @kitehillfoods)

1/4 cup store bought pico de gallo

1/2 avocado, chopped

Bag of grain-free tortilla chips (I use @sietefoods Dip Chips)


HOW TO MAKE

-Brown ground beef and sausage over medium heat.

-Pour in water and 2 Tbsp taco seasoning. Mix thoroughly to coat meat.

-Add in jalapeño, onion, and cilantro. Let cook for 5 minutes.

-Lower heat to medium-low. Add in jarred queso and Greek yogurt. Mix thoroughly, and let heat for 5 minutes, stirring periodically.

-Add in pico de gallo, 1/2 tsp taco seasoning, and avocado. Stir to mix thoroughly.

-Transfer to a serving dish.

-Top with cilantro, jalapeños, Greek yogurt, avocado, and pico de gallo.

-Serve with tortilla chips.
