Low Carb, Gluten-Free Pickle & Cheese Bread Sandwich

If you’re trying to cut the carbs, or just really love pickles and cheese, this viral low carb and gluten-free PICKLE & CHEESE BREAD SANDWICH is for you! But you have to shred the cheese fresh off the block, otherwise, it won’t melt right or taste as good. This does come out pretty salty, so keep that in mind when making your sandwich.


SIDE NOTE: If it comes out greasy, just use a paper towel to blot and soak up the grease. This is normal!


Low carb, gluten-free pickle and cheese bread sandwich


INGREDIENTS

1 1/2 cup cheddar cheese, shredded off the block, divided (I use Organic Valley)

6-8 sandwich pickle slices (I use Grillo's Pickles)

Your favorite sandwich filling


HOW TO MAKE

-Preheat oven to 400, and line a medium-size baking sheet with parchment paper.

-Place pickle slices on a paper towel, and press with another paper towel.

-Spread 1/2 cup of cheese to one side of the baking sheet in a rectangular shape.

-Repeat the previous step on the opposite side of the baking sheet with another 1/2 cup of cheese.

-Lay pickle slices on top of cheese, 3-4 on each pile of cheese.

-Spread the remaining 1/2 cup of cheese in a thin layer over the top of both piles.

-Cook for 15-20 mins in oven, until cheese is completely melted.

-Let cool before assembling the sandwich.
