Where my okra lovers at?! Personally, I will eat okra any way it comes- fried, roasted, stewed, pickled- you name it! While okra drenched in flour and tons of oil isn’t good for us, roasted is a great alternative that still gives that fried-like crispness! This recipe couldn’t be any easier, and totally satisfies that love for fried okra.
INGREDIENTS
1 lb pkg fresh okra, rinsed
1 Tbsp extra virgin olive oil
1/2 tsp Maldon salt flakes or pink Himalayan sea salt (I use @maldonsalt)
1/2 tsp fresh ground black pepper
Your choice of condiments (I use @primalkitchenfoods ketchup)
HOW TO MAKE
-Preheat oven to 450.
-Cut okra into half inch pieces.
-In a medium bowl, combine okra, olive oil, salt, and pepper. Mix until all pieces are coated.
-Spread okra out onto a baking sheet, making sure it’s in a single layer.
-Bake for 25 minutes, giving them a shake half-way through.
-If not to your desired crispness, bake for 5 more minutes.
-Serve with preferred condiments.
