Pecan Pie Puff Pastry Bites

If you think about it, small bites or mini desserts are very ideal during the holidays. This way, you can have a little bit of everything and don't have to decide on only one! As someone who is indecisive, I love this mentality. They're also a better-for-you option since there's not a ton of refined sugar like the regular pecan pie. So if you're wanting a lighter dessert option to serve, these would be a perfecrt choice. And if you happen to eat them all yourself, we aren't here to judge!


These bites are also incredibly easy to make, they're pretty much fail-proof. Since we're using pre-made puff pastry, it also cuts down on the time it takes to make them. Which the holidays are meant to be spent with family, not working away in the kitchen!

SERVING SIZE: 12 Pecan Pie Puff Pastry Bites


INGREDIENTS

1 sheet gluten-free puff pastry

1/2 cup coconut sugar

1/4 cup pure maple syrup

2 Tbsp unsalted butter, melted

1 large egg

1 tsp vanilla extract

1/4 tsp salt

1/4 tsp ground cinnamon

1 cup pecan halves & pieces


HOW TO MAKE

-Preheat oven to 400.

-Lay out puff pastry on a flat surface, and cut into 12 equal squares.

-Place puff pastry squares into muffin tin and press to make a cup.

-In a large bowl, whisk coconut sugar, maple syrup, melted butter, egg, vanilla extract, salt, and cinnamon. 

-Fold in pecans until fully incorporated.

-Spoon filling equally into pastry shells, about 3/4 full. 

-Bake for 18-22 minutes, until filling is set and puff pastry is golden.

-Let cool in muffin tin for 5 minutes, then gently remove.

-Enjoy!
