Strawberry Frozen Yogurt Bites

Greek Yogurt ➡ Dairy-Free Greek Yogurt


It gets HOT in Texas during the summer, the heat does not play around here! It always helps to have some cold snacks on hand to cool off, and these frozen yogurt bites do the trick! You can use any fruit you like, but strawberries and blueberries are two of my faves!



INGREDIENTS

2 cups granola, big chunks broken up (I use original @purely_elizabeth)

4 Tbsp almond butter

4 Tbsp honey (I use @naturenates)

1/2 tsp cinnamon

1 cup fresh strawberries, finely chopped (about 5 strawberries)

1 cup fresh strawberries, mashed (about 5 strawberries)

1 1/4 cup Greek yogurt (I use @kitehillfoods plain Greek-style yogurt)

1/2 cup dairy-free cream cheese, softened (I use @kitehillfoods)

1 tsp vanilla (1/2 tsp for crust and 1/2 tsp for topping)


HOW TO MAKE

-Place cupcake liners in a muffin tin (mine is the tin that makes 12 muffins).

-Put honey and almond butter in a small bowl, and heat in microwave for 30 seconds.

-Stir and heat in microwave for 15 more seconds. Stir again.

-Put granola in a medium bowl, and add in the honey, almond butter, vanilla, and cinnamon. Mix thoroughly.

-In a large bowl, combine Greek yogurt, cream cheese, vanilla, and strawberries. Pro tip: to mash strawberries- finely dice them and mash with a fork.

-Place 2 Tbsp granola mixture in cupcake liners. Press down to flatten the mixture in each liner.

-Top with 2 Tbsp Greek yogurt and strawberry mixture.

-Cover with foil, and place in freezer to set for at least 2 hours. If you leave it in for longer, you may need to let them thaw for a few minutes before eating.

-Top with a fresh strawberry slice before serving.
